Dried mango is obtained from ripe and fresh mangoes dried through the principle of osmosis followed by drying with the use of a cabinet dryer. Dried mango is made by cutting mango into slices and drying those in solar and/or fuel fired dehydrators. Another variation of the product is called mango leather which is made by making mango pulp and drying the pulp.
The taste is different from that of fresh mangoes. The finished product is golden yellow with a semi-translucent, plump appearance, chewable texture, which is neither crisp or leathery and a flavor characteristic of sweetened mango. Dried Mango color is generally yellowish orange, and dried mango slices for most fruits are generally 3/4 or 4/5 mm thick.
Dried mangoes can be eaten as snacks and dessert or used as ingredient for ice cream mixes and toppings. And dried mango extends it has longer storage time. Dried mangoes can make use of the energy in the fructose at a time when food is short.
